Basic of baking

There are a few basic needs for baking a bread,that is bread flour(high protein flour), yeast, water, salt, sugar, shortering(butter) and eggs. Baking a cookies, we need butter, salt, sugar, normal flour, eggs, baking soda and baking powder. For cakes, we use cake flour(high ratio flour), eggs, butter, sugar and salt.

The diffent between bread flour, normal flour and cake flour is the amount of gluten contain in the flour. We can test it though washing the flour away and the left is the gluten. The gluten look like rubber.The reason we use bread flour for baking bread is because we want the bread to have a higher volume and have a bit of "rubber". For cake, we want it to be soft so we use high ratio flour.

Salt is a must for baking any product. We can't put more salt because it will taste salty or less salt because salt brings out the taste. Measurement must be correct.

We can change butter into margerine in order to save cost.

If you are living in a cool place, you have to use hot water. For people who lives in the warm places better to use warm water. This is because we want the yeast to work better.

The amount of sugar can always be reduce. You can control the sugar if you you want to increase the sweetness but do take care of your health.
